Superb Grilled Cheese Sandwich
A traditional childhood staple, but loved at all ages, there’s a heartwarming sense of nostalgia that comes from smelling a Superb Grilled Cheese Sandwich coming from the kitchen. Mine was often served with fresh plums from my grandmother’s plum tree!
This version is a bit healthier, served to the boys and I by a friend while swimming at their home this summer. We prefer it to the classic white-bread-and-kraft-cheese version, but I use only once slice of cheese for kiddos. Savory, buttery, creamy with just the right amount of crisp, there is a proper method to this masterpiece.
Essentials
4 Slices Ezekiel Bread
4 T Salted Butter
4 Slices Muenster Cheese
Fresh Garlic Chives or Parsley, finely chopped
Directions
Assemble two sandwiches with two slices of cheese staggered inside each sandwich.
In a medium skillet over medium heat, add 1 t of butter; let it melt.
Once butter is melted, add one sandwich to the skillet.
Push the sandwich around the edges of the skillet, in all directions, to soak up the melted butter into the crust.
After 3-4 minutes, lift one corner to check to brownness of the bread.
Once brown, remove from skillet with a spatula (right or left hand) and add another t of butter to the skillet (opposite hand); let it melt.
Return the sandwich to the skillet, untoasted side down, and cook for 3-4 minutes.
As previously stated, lift one corner with a spatula to check level of brownness.
Repeat steps 2-8 for second sandwich.
Add fresh herbs and serve with warm soup, pesto sauce, or condiment of choice!
