Poppy Seed Dressing

 

Pleasantly sweet with a seedy, translucent elegance, Poppy Seed Dressing pairs well with grilled peaches, roasted Brussels sprouts, and can be used as a marinade for fish!

3/4 C Organic Cane Sugar

1 Tsp Dry Mustard

1 Tsp Sea Salt

1/3 C White Vinegar

1 T Onion Juice

1 C Extra-Virgin Olive Oil

2 T Poppy Seeds

Directions

  1. In a large mixing bowl, add organic cane sugar, sea salt, dry mustard and vinegar; stir well.

  2. Add onion juice and oil while slowly using a hand frother (I use Aerolatte) to emulsify.

  3. Add poppy seeds and stir well.

  4. Chill and serve!

Tip: to extract juice from an onion, simply grate half an onion into a bowl, cover with a towel for 10 minutes, and strain the juice with a strainer.
