Raspberry Balsamic Vinaigrette

 

Tart and rich, Raspberry Balsamic Vinaigrette (RBV) has a bit more tartness to it than Strawberry Balsamic Vinaigrette (SBV), so I add monk fruit or organic, raw honey to sweeten it up a bit. You may also add champagne vinegar to the elements if you prefer a thinner consistency.

5 C Organic Raspberries

1/4 C Extra-Virgin Olive Oil

1/4 C Organic Raw Honey

4 T Alessi Balsamic Vinegar

1/2 Tsp Tarragon

1/2 Tsp Sea Salt

4 Oz. Raw Monk Fruit or organic, raw honey

Directions

  1. In the bowl of a food processor, add all ingredients and blend until smooth.

Serve over pork cutlets, with poached pears, over ice cream or with freshly sliced avocados.
