Broccoli Cheddar Fritters
Healthy snacks don’t have to be boring or tasteless. Cheesy, savory, and flavorful Broccoli Cheddar Fritters not only give broccoli its good rep back, they’re legit addicting. I do recommend using a food processor to blend your broccoli, but finely chopping is a great way to relieve stress — silver lining! No matter how you prep these fritters, they’ll be a crowd-pleaser.

1 Large Head of Broccoli
2 Extra-Large Eggs
1/2 C Almond Flour
2 C Cheddar Cheese, Shredded
2 Tsp Garlic Salt (powder if you’re watching your sodium intake)
1 Tsp Black Pepper
Directions
Using a knife, separate Broccoli into 3-4 sections and chop stems from florets; discard stems.
Add florets to a food processor and blend or finely chop. You should have 3-4 cups of broccoli florets.
In a large mixing bowl, add all ingredients and stir until well combined.
Spray a cast iron skillet with cooking spray (I use avocado oil) over medium heat.
Spoon a palm-sized amount of mixture into your hand and form into an even patty, not thicker in the center.
Sauté for 3 minutes and flip; repeat.
Serve with marinara, greek ranch, or cheesy garlic sauce.
