Roasted Garlic Hummus

 

How do you capture the essence of the Mediterranean? Smooth and savory Roasted Garlic Hummus; perfection by itself and a flavorful, nutritious addition to a plethora of meals.

Try adding red bell peppers, avocados or sun-dried tomatoes to this recipe for flavor variations.

 
 
Roasted Garlic Hummus
 
 

Elements 

1 Can Organic Garbanzo Beans, rinsed

2 Lemons, juiced

1/2 Tsp Black Pepper

3 Tsp Sea Salt

1 T Organic Peanut Butter or Tahini Paste

4 T Safflower Oil

6 Cloves Roasted Garlic

2 T Garlic Powder

Paprika to Taste

Cumin to Taste

Directions

  1. Preheat oven to 400° Fahrenheit.

  2. Slice the top off of the garlic bulb, drizzle with olive oil, sprinkle with sea salt and black pepper, add sprigs of rosemary and place on a silpat-lined baking sheet; roast for 30 minutes.

  3. Once cooled, squeeze roasted garlic from pod into a ramekin and set aside.

  4. In the bowl of a food processor, add beans, lemon juice, peanut butter or tahini paste, olive oil, roasted garlic and seasonings; blend until smooth.

  5. Serve drizzled with oil and sprinkled with paprika and/or cumin.

May also be served as a spread on sandwiches, wraps, added to omelettes, and used in place of marinara sauce on pizzas.
