Cinco De Mayo Margarita Cuppies

 

HISTORY LESSON: May 5th is observed to commemorate the Mexican Army's unlikely victory against French forces at the Battle of Puebla in 1862. Not to be mistaken for Mexico's Independence Day, which takes place each year on September 16th.


Celebrate Cinco de Mayo with these sweet and vibrant Cinco de Mayo Margarita Cuppies. Flavors of margarita mix, fresh lime juice, and a dash of vanilla are irresistible + pretty, too.

Cuppies Elements

1-3/4 C Organic All-Purpose Flour

2 Tsp Baking Powder

1/2 Tsp Sea Salt

1 Stick Butter

1 C Organic Cane Sugar

2 Large Eggs, Room Temperature

2 Tsp Madagascar Bourbon or Mexican Vanilla Extract

1/2 C Milk

3 Medium Limes, zested and juiced

1/4 C Margarita Mix

Cuppies Directions

  1. Preheat oven to 350° Fahrenheit.

  2. Set a sifter into the center of a medium mixing bowl and add flour, baking powder and sea salt; sift dry ingredients into bowl.

  3. In the bowl of a stand mixer fitted with a whisk attachment, add butter and sugar; whisk until well incorporated.

  4. Add eggs, one at a time, and whisk well.

  5. Add vanilla extract and beat on medium-high speed until all is incorporated; be mindful to scrape the sides well.

  6. Alternate adding the dry ingredients, one cup at a time, and the milk to the wet ingredients and whisk until well combined.

  7. Increase mixer to high speed and add lime juice, lime zest, and margarita mix; whisk well.

  8. Line two muffin pans with paper cups and spoon/scoop batter into each cup, about 1/2 to 2/3 full.

  9. Bake cuppies for 18 - 20 minutes or until a toothpick comes out clean when inserted into the cake.

  10. *Optional* While cuppies are still warm, brush tops with tequila for an infusion of flavor and allow it to soak into the cuppies before frosting with buttercream.

Key Lime Buttercream Elements

7 - 8 C Confectioners Sugar

1 C Crisco Vegetable Shortening

1/8 Tsp Salt

1 Tsp Vanilla Extract

2 T Key Lime Juice

3/4 C Milk

2 T Key Lime Zest *optional

Coarse Sugar

Sea Salt *optional

Key Lime Buttercream Directions

  1. In a large mixing bowl, add shortening, vanilla extract and lime juice; cream together with a hand mixer until smooth.

  2. Add confectioners sugar, one cup at a time, followed by a splash of milk each time, until all is used, whisking well in between additions.

  3. Add lime juice and lime zest for frosting and whisk well.

  4. Spoon frosting into a piping bag prepped with your tip of choice and frost your cuppies.

  5. Garnish with a lime wheel or lime wedge and sprinkle with lime zest and coarse sugar or sea salt, if desired.
