Pomegranate Pecan Salad

 

Combining textures and flavors are two of my favorite qualities about salads. Poms bring crunchy and tart elements, as well as a pop of color. Add the remaining ingredients below and you have a Pomegranate Pecan Salad worthy of holiday celebrations.

Salad Elements

Arils from one pomegranate

Butter lettuce or Triple Green Salad Mix

2 Cans Mandarin Oranges

2 C Pecan Halves

Feta Cheese Crumbles

2 Pears of choice, thinly sliced

Ginger Dressing Elements

1/4 C Extra-Virgin Olive Oil

1 T Apple Cider Vinegar

1 T Dijon Mustard

1 T Maple Syrup or Honey

1 T Fresh Ginger, finely grated

1/4 Tsp Sea Salt

1/4 Tsp Black Pepper

Directions

  1. In a small skillet over medium heat, add pecans and toss with a wooden spoon.

  2. Rinse and spin lettuce; place in large mixing bowl.

  3. Add pom arils, oranges, feta crumbles, and pear slices; toss to combine.

  4. Serve with Ginger Dressing on the side; salad will get soggy if you toss dressing into it.
